Candied salmon ice cream takes top Symphony of Seafood prize

Candied Salmon Ice Cream, made by Coppa, a retailer in Juneau, Alaska, took home the grand prize in the Alaska Symphony of Seafood competition. Coppa and the other winners were announced at the Juneau Legislative Session and Awards Ceremony in Juneau on Wednesday, 22 February.

Coppa also took home the first place prize for its salmon ice cream in the foodservice division, as well as the Juneau’s People Choice Award. In the retail category, Dear North’s Alaska Salmon Bites made by Authentic Alaska LLC won the first place prize.

The first place winner in the Beyond the Plate Category was Crystal Clarity, a chitosan-based pool and spa clarifier from Tidal Vision, and the winner in the Beyond the Egg category was Bruce Gore Coho Salmon Bottarga from Triad Fisheries.

The grand prize and first place winners, along with the Seattle People’s Choice winner, SeaFare Pacific Salmon Chowder from Oregon Seafoods, win a trip to Seafood Expo North America/Seafood Processing North America in Boston, taking place 19 to 22 March, 2017.

In the Foodservice category, Seafood Cakes with Dungeness crab from Odyssey took second place, and Orca Bay’s Albondigas (Mexican seafood soup) from Orca Bay Seafoods won third place. Second place in the Retail category was awarded to Orca Bay’s Jjamppong (Korean seafood noodle soup) and third place went to Sockeye Salmon Bites made by Bambinos Baby Food.

In the Beyond the Plate division, Alaska Naturals Alaska Salmon Pet Oil from Trident Seafoods won second place while Salmon Sisters’ Salmon Leather Clutch won third place. In the Beyond the Egg category, second place went to Trident’s Sake Flavored Pollock Roe.
