Fairmont Hotels and Resorts on Wednesday announced its Algonquin location in St. Andrews by-the-Sea, New Brunswick, is now serving some of North America’s first Seafood Trust-certified farmed Atlantic salmon.

The salmon was featured on Wednesday at a reception attended by Cooke Aquaculture executives, officials from southern New Brunswick’s coastal communities and the media.

The salmon is raised by True North Salmon, a subsidiary of Cooke Aquaculture of Blacks Harbour, New Brunswick, and is also sold at retail under the Heritage Salmon brand.

The internationally recognized Seafood Trust eco-label ensures the salmon is produced in compliance with strict international standards for sustainability, quality and traceability, said Cooke CEO Glenn Cooke.

“Fairmont Hotels and Resorts is committed to providing our guests with quality product from environmentally conscious partners. It has become an expectation from our guests that the food we produce at each of our properties is fresh from local growers and producers who share our environmental values,” said Ryan Dunne, Fairmont Algonquin executive chef.

“We are very fortunate to have genuine Atlantic salmon literally at our fingertips,” he added. “There is not a chef in the world who would not envy our position. The product we serve at our resort is raised right in Passamaquoddy Bay. You can’t get fresher than that.”
