SeaFood Business Summit to hit on menu trends

The International Boston Seafood Show kicks off on Sunday at 10 a.m., and leading off the show’s conference program at 11 a.m. is the annual SeaFood Business Summit.

The Summit is devoted to giving seafood buyers a focused discussion on current events and industry trends and to arm them with the knowledge that they can take back to their businesses. This year’s topic is aimed at the foodservice crowd and will tackle seafood menuing trends.

Maeve Webster of Los Angeles-based Datassential will run through seafood trends on menus across the United States, using the company’s MenuTrends tools that gather data from 2,500 restaurant chains and 4,500 independents — more than 1.3 million dishes in all.

Afterward, SeaFood Business Senior Editor James Wright will moderate a panel discussion with Webster; Peter Christie, CEO of the Massachusetts Restaurant Association; Jim Ulcickas, founder of Bluewater Grill Seafood Restaurants; and Peter Gibbons, VP-product development at Captain D’s Seafood Kitchen.

Last year’s Summit focused on the Gulf of Mexico seafood industry’s recovery efforts after the 2010 Deepwater Horizon oil spill off the coast of Louisiana.
