Supermarket becomes first and only to sell fresh seaweed product

Waitrose has announced the launch of foraged Cornish seaweed, which will arrive in its stores from the 20 April.

It will be the only U.K. supermarket to sell fresh, natural kombu seaweed, which grows in the shallow parts of the sea.

The kombu variety of seaweed grows wild on the Cornish coast between April and October, and is harvested by The Cornish Seaweed Company. This supplier also provides the sea vegetable to restaurants across the country.

Kombu seaweed is a popular and versatile ingredient that is credited with many health benefits. One particular attribute is its high iodine content, which helps to control the metabolic rate of the body and helps to keep skin healthy.

“Seaweed is one of this year’s biggest trends in veg which we’re seeing on the menus of some of London’s top and most creative restaurants,” said Simona Cohen Vida, Waitrose product developer.

The Cornish Seaweed Company is run by conservationist Tim Van Berkel and renewable energy engineer Caro Warick-Evans.

“We began our venture into seaweed over four years ago and we’re thrilled to now be stocked by Waitrose. We’re passionate about the benefits of seaweed and want to make it more accessible for everyone to cook with,” said Warick-Evans.

The Cooks Ingredients Kombu Seaweed, which will retail at GBP 1.99 (USD 2.85, EUR 2.49), will be available from Waitrose fish counters across 139 branches.
