Ernest Maillet decided in 1952 to open a canteen in Shediac, New Brunswick, intent on seasonally selling cooked lobster to tourists. With the help of son Hector Maillet, Ernest was able to incorporate his business in 1968; Shediac Lobster Shop was also able to obtain its first charter as a limited company that year.
