Ernest Maillet decided in 1952 to open a canteen in Shediac, New Brunswick, intent on seasonally selling cooked lobster to tourists. With the help of son Hector Maillet, Ernest was able to incorporate his business in 1968; Shediac Lobster Shop was also able to obtain its first charter as a limited company that year. The company is now in its third generation and employs upwards of 200 employees. As its name suggests, Shediac Lobster Shop Ltd. specializes in the distribution of high quality lobster products.
