High Pressure Pasteurization (HPP) is cold pasteurization in pure water; it uses ultra-high pressure purified water to keep seafood both shell and pathogen free. HPP is used in several segments of the food industry to inactivate foodborne pathogens such as Salmonella, Listeria monocytogenes, E. coli, Campylobacter species and other vegetative pathogens. In the oyster industry, HPP provides an approved process for inactivation of Vibrio bacteria which provides a high risk from the consumption of raw oysters and other shellfish. HPP increases food safety and extends shelf life.

AV-10 High Pressure Processing (HPP) Machine

The Avure AV-10 High Pressure Processing (HPP) system is designed specifically for small/medium and seasonal processors. With its ability to product 10 million lbs per year, low initial and operating costs, and ease of use and maintenance features, it dramatically lowers the cost and risk of entry to HPP. It is also a perfect system for larger HPP processors in need of 3rd shift and redundancy options. 

AV-M HPP Modular System

The AV-M produces more food and beverages worldwide than any other machine. With a working capacity of 20 Million Lbs up to 40 Million Lbs of throughput per year and the world's fastest cycle times, the AV-M reliably processes more products per cycle than any other available system. A maximum working pressure of 87,000 psi (600 MPa) will achieve rapid food borne pathogen destruction for targeted food safety and shelf life goals.

AV-S HPP Seafood System

The AV-S is the only HPP system designed specifically for the seafood industry. Its vertical design and built in safety features prevent damage to the machine. Compared to other methods for seafood meat extraction, the AV-S increases yield in meat separation by up to 80%.Separates 100% of meat from shell, reduces maintenance costs, vertical loading and specialty design protects vessel liner from sand, shell fragments and other abrasives, hydrates meat to increase yields, reduce cook time and improve taste.
