Scallops, Patinopecten yessoensis / Placopecten magellanicus

Our newest in house produced MSC MSC certified scallops. This product you can use for various purposes even for sashimi. Scallops can be steamed, fried or grilled but should be cooked gently and only for a very short time or their delicate flavour and texture will be spoiled. Because of their delicate flavour you can perfectly use this product for sashimi. Because we have direct lines with the factory based in Holland, the lead time is very short, so freshness guaranteed.

Swordfish, Xiphias gladius

The swordfish is named after its bill resembling a sword. This makes it superficially similar to other billfish such as marlin, but upon examination their physiology is quite different and they are members of different families. The flesh of some swordfish can acquire an orange tint, reportedly from their diet of shrimp or other prey. Such fish are sold as "pumpkin swordfish", and command a premium over their whitish counterparts.

Open Seas works hard to support the future of tuna worldwide, this is enclosed in our key values. In 2012 Open Seas got involved with a fishery project in Indonesia called FIP (Fisheries Improvement Project). This project represents exactly what is important to Open Seas: a long term vision which aims for a sustainable way of catching tuna, a vision in which levels of tuna population are guarded and maintained, a vision where local fishers get honest rewards for their efforts.
