Carpaccio

Thinly sliced smoked wild salmon is one of the new products that Seattle, Washington-based supplier Ocean Beauty is featuring at Seafood Expo North America in Boston, Massachusetts, taking place 19 to 21 March, 2017.

The retail packs of smoked salmon carpacchio are packaged with either a red onion and caper viniagrette or a raspberry processo sauce.

“We are trying to elevate the product more,” said Ron Christianson, vice president of domestic sales for Ocean Beauty.

The retail packs will start shipping this fall.

Also gaining distribution – including at Safeway stores in Northern California – is Ocean Beauty’s two-pound Echo Falls Smoked Salmon Candy.

Meanwhile, for foodservice, Ocean Beauty recently launched a Pulled Salmon, made from wild keta salmon.

“It looks like pulled pork. We pre-cook it and add spices and barbecue sauce,” said Kevin Palmer, national sales.

While there is a farmed “pulled salmon” product on the market, Palmer believes this is the first wild pulled salmon product.
