Prestige Oysters acquires Louisiana grilled oyster firm Bayou Carlin

San Leon, Texas, U.S.A.-based Prestige Oysters has announced its acquisition of Bayou Carlin Oyster Co., a move which the company says “marks a significant step forward in Prestige Oysters’ commitment to expanding its product line and enhancing its operational capabilities.”

The acquisition is expected to be finalized by 10 March. 

Louisiana-based Bayou Carlin Oyster, founded by chef Boyer Derise, specializes in grilled oyster kits which include shucked Gulf oysters and compound butter. Prestige Oysters will retain the Bayou Carlin Oyster brand.

Prestige Oysters is a family-owned company that specializes in year-round Gulf Coast oysters, which it sells fresh, frozen, and high-pressure processed. 

"This acquisition represents a unique opportunity for Prestige Oysters to strengthen our position as industry leaders while continuing to uphold the highest standards of quality and sustainability," Prestige Oysters Vice President Raz Halili said. "Bayou Carlin's innovative approach to oyster grilled oyster kits and their commitment to sourcing sustainable domestic oysters resonate with our values, and we are excited to integrate their operations into our family."
