Fried Peanut Shell Crusted Grouper, served at Coast restaurant at the Beau Rivage Resort and Casino in Biloxi, Mississippi. “The dish was created as we used the fried peanuts in another dish and found ourselves eating the shells since they are crispy and delicious on their own,” said Kristian Wade, executive chef for Beau Rivage. “It got me to thinking about other uses for the shells and a crust was an obvious choice. I felt like it would go really well with a nice piece of fish, and grouper is my favorite.”
