Incepted in 2015, The Highroller Lobster Co. has had one primary aim from the very beginning – to bring Portland, Maine “the lobster (and crab) rolls it deserves.” As such, the lobster used in Highroller’s signature lobster roll is always fresh, and the buns used to envelope the seafood are baked daily by Southside Bakery, according to the company’s website.
The mobile shop can be found around Portland’s Custom House and Bissell Brothers Brewing Company. Customers hungry for a lobster or crab roll from the shop are prompted to pick a sauce: red-pepper mayo, lime mayo, jalapeño mayo or lobster ghee. Avocado and bacon can also be added onto each roll for an additional charge.
