Although Freshies Lobster Co. owners Ben and Lorin Smaha hail from Cape Elizabeth, Maine and Lebanon, New Hampshire, respectively, the couple found a home for their food truck business high in the Rocky Mountains in Utah.

The pair started out selling Maine lobster from their first food truck in Park City, Utah in 2009, then expanded their presence to Midway and Salt Lake City. After seeing the demand for lobster rolls rise from its locations on wheels, the company opened a brick-and-mortar café that serves locals and tourists year round in Park City as well. 

Even from so far away, the company is happy to give back to its homestead. 

“Freshies Lobster Co. is proud to provide the working waterfront with our business and give back to the great state of Maine and its tradition of sustainable practices. Freshies also believes in sourcing quality ingredients and uses local products whenever possible,” according to the company’s website. 

The Freshies Lobster Roll comes on a toasted New England hot dog bun, and features fresh lobster, mayo, hot butter and seasoning. Customers can order an XL roll, which includes five ounces of lobster; a Real Mainah, which comes packed with a quarter-pound of lobster meat; or a Tourist, which comes with half the lobster meat included in a Real Mainah, per the company’s menu.
