“Not all lobster rolls are created equal,” according to Bite Into Maine’s founders Karl and Sarah Sutton.

The married couple established the Bite Into Maine food truck in 2011 after a lobster roll pilgrimage across the state left them with a desire to “bring some fun and delicious spins on [the] beloved sandwich.”

The business holds itself to exacting Maine standards, sourcing its lobster, bread and butter locally, as well as its vegetables, drinks and desserts. The original Bite Into Maine food truck can often be found perched near the ocean with a view of Portland Headlight at Fort Williams Park. Meanwhile, Silver Sue, the company’s 1977 Airstream shop, can be spotted adjacent to Allagash Brewing Company during the summer months, and a new brick-and-mortar location for the business is scheduled to open soon in Scarborough, Maine.

Bite Into Maine’s Signature Maine Lobster Rolls can be customized in various ways, including the following:

  • Maine style with light mayonnaise & fresh chives
  • Connecticut style with hot butter
  • Picnic style which includes layer of coleslaw, hot butter, and a dash of celery salt
  • With wasabi mayo
  • With curry mayo
  • With chipotle mayo
