Spanish seafood processor Lumar Seafood International is presenting a new line of healthy retail tuna products at Seafood Expo Global, to be held in Brussels from 21 to 23 April 2015.
The product line features tuna tenderloins stuffed with vegetables and spices including mushrooms duxelle, spinach, pine nuts, pumpkin and other ingredients, all created by a Michelin Star Chef. The company’s tuna tenderloin mushroom duxelle has already won the innovation prize at the Wabel Frozen Food Awards. The product consists of round portions of Indian Ocean yellowfin tuna loins stuffed with mushrooms, spinach and shallots blended in an extra virgin olive oil and white wine sauce. It is based on Lumar’s existing stuffed tuna tenderloin line that was a finalist at the Seafood Expo Global Prix d’Elite competition.
The company uses fish that is blast-frozen after capture, and fished from sustainable, legal and monitored sources.
