Top 3 trends impacting seafood on menus

AquaBountySalmon_318x203.jpg.medium.800x800.jpegConsumers’ anti-GMO stance will likely cause U.S. restaurants to shy away from featuring GMO salmon. While AquaBounty’s AquAdvantage salmon has not yet been approved by the FDA, consumers have convinced most of the major U.S. grocery chains to commit to not selling GMO salmon when it becomes available. Consumers are likely to urge restaurant chains to also agree not to serve the fish. Leading chefs and independent restaurants may also profess their anti-GMO stance, once the fish becomes available for purchase.

“Whatever the science says, many consumers have made up their minds: no genetic tinkering with their food,” Rita Negrete, senior editor at Technomic, wrote in a recent Technomic Blog post. “Some diners will gravitate to restaurants touting GMO-free fare; others will demand GMO labeling on menus.”
