U.S. retail and foodservice buyers have been shifting to sustainable seafood for the past few years – and it’s still in high demand, experts say. EatingWell magazine recently listed sustainable seafood as one of its top trends for 2020, citing that “more and more chefs are putting sustainable options on their menus, and consumers are more open to trying different types of fish (outside of their typical shrimp and salmon).”
