Revo Foods introduces plant-based salmon fillet made with 3D printing technology

Vienna, Austria-based food technology start-up Revo Foods formally launched its new plant-based salmon fillet on 30 May, 2022, at a public tasting event.

The fillet is produced via 3D printing technology and is made fully of plant-based products, including pea protein, algae extracts, and plant oils. 

Revo Foods described the product as an innovative “game-changer” for plant-based alternatives, given the fact that the product is presented in a “whole-cut” format. The structure and texture of the fillet very closely resemble a salmon fillet, and can be prepared the same way as a conventional salmon fillet, the company said.

“It’s all about structure and creating the perfect bite," Revo Foods CEO Robin Simsa said.

Revo Foods said the plant-based salmon fillets will be available in stores in Austria and Germany beginning in early 2023. It already sells its plant-based Revo Smoked Salmon in 16 European countries. Recently, Revo Foods received EUR 2.2 million (USD 2.3 million) in equity-free grant funding from the Austrian Research Promotion Agency to advance its work in producing what it has dubbed "Generation 2.0" of plant-based meat and seafood alternatives. The new products it is in the process of designing “redefine both the eating experience and the global vegan food market” Revo said.
