The advanced new equipment boasts an x-ray to detect pinbones and employs water jets to cut the fish, instead of a blade. This allows for angled cuts and specific J-cut patterns that are more difficult to replicate by hand; cod fillets can be cut and portioned skin on, with a better yield. The whole process takes only seconds.
