Then, they sauté yellow onions, deglazing the onions with sweet cherry and a bit of sugar. They cook down the onions and mix blue cheese and butter with a little bit of green onions. “The grouper is served with the caramelized onion and blue cheese butter on top of it. It is a very popular dish,” said executive chef Jairo Mejia.
