“We wanted a dish that would showcase the wonderful tuna that we are so fortunate to get in to the restaurant on a pretty consistent basis,” said GW Fins Executive Chef Mike Nelson. Ingredients include sushi-grade tuna, ginger slaw, avocado aioli and wasabi caviar. “This dish allows us to serve this sushi-grade tuna raw, to showcase how beautiful and delicious it is. And the other ingredients, especially the wasabi caviar, really gives it a great pop of flavor,” Nelson said.
