Nestled on a leafy side street, its floor to ceiling glass windows looking out over the canopied outdoor eating area, Humboldt Farm Fish Wine evokes a sense of relaxed charm.

Seafood gets a serious portion of the menu – including starters – with the essential oysters, tuna tartare, charred octopus and peel and eat shrimp. It also includes plenty of gutsy mains like their grilled Verlasso salmon and pan seared Alaskan halibut.

When asked the most popular dish on the menu, Executive Chef Brett Bowen goes for the locally sourced pan seared Colorado trout, the accompaniments changing with the season, but a constant fixture on the menu.

At the time of offering it was surrounded by a succotash of Olathe sweet corn, okra, shell beans, shishito peppers, pickled watermelon radish, and creole spice, all bathed by a smoked tomato bisque.
