3. Taste of the ocean platter at Monster Kitchen

The Ovolo Nishi Hotel sits on Lake Burley Griffin. Up a grand stairway, Monster Kitchen unfolds through the lobby and continues into several different dining options, each offering their own ambience.

On the “Taste of the Ocean Platter,” unwavering attention has been placed on the essence of each different fish and seafood item, preparing them in a unique style and with ingredients that make them shine in simplicity.

Included on the platter on most days, there will be:

  • Cleanseas’ Hiramasa kingfish that has been cured on salt and sugar for two hours and served on a homemade tapioca cracker with wasabi aioli and pickled carrot.
  • Ora King salmon, doused with a pancetta cure, and decorated with curls of pickled fennel.
  • Snowy River trout, cured then smoked using Cherrywood, and served with chives, yuzu, shallots, and Togarashi.
  • Sydney Rock Oysters, served on the half-shell.
  • Yarra Valley caviar on fresh plump blini spread with horseradish crème fraiche.

Served together, the entire dish gives a sensory tour of Australia’s waters, from its rivers to the ocean.
