Acme exec bullish on smoked salmon sales for holiday season with new product launch

Acme Smoked Fish Chief Marketing Officer Teresa Low has a positive outlook on smoked salmon sales for the holiday season and into 2023, as the supplier launches a new product.

To capture additional holiday sales, Brooklyn, New York, U.S.A.-based Acme is launching Danish Double-Smoked Salmon under its Spence & Co. premium product line in select Whole Foods Market stores.

“Our expectations for the holiday season are optimistic, as families are able to gather together again for special traditions, and we hope that delicious eating and incorporating new flavors like the Double Smoked Salmon will be on festive tables from coast to coast,” Low told SeafoodSource.

For the holidays, Acme team members are planning to “deck out appetizer boards with cheese, crackers, olive and Double Smoked Salmon along with wine pairings,” Low said.

The new Double-Smoked line is developed over a 24-hour process in Scandinavia, “bringing together innovation with time-honored techniques,” the company said in a press release.

The process begins in the village of Outrup, at a Danish smokehouse where smoked salmon has been a tradition for more than 100 years. Sustainably-raised fresh Norwegian salmon is hand-filleted then dry-cured with sea salt.

Next, the fish is naturally cold-smoked over sweet beechwood for nine hours, which results in a sweet-tasting salmon as the beechwood produces a low-acid smoke, according to Acme. After another drying session, the salmon rests for 12 hours before it is hand-sliced and trimmed. The proprietary smoking process takes twice as long as traditional smoking times, Acme said.

“Double-smoking the salmon for this special product blends traditional methods with modern techniques, in a process that’s done entirely by hand, one batch at a time,” Acme Vice President of Technical Services Matt Ranieri said. “It’s a wonderful way for salmon lovers to try something new and enjoy an even more robust flavor.” 

Acme’s hot smoked and cold-smoked varieties include Nova Smoked Salmon, Gravlax, Pastrami Smoked Salmon, Everything Bagel Smoked Salmon, and Togarashi Smoked Salmon. Its Spence & Co line includes Smoked Salmon Pinwheels, Wild Salmon Seafood Salad, and Scottish Smoked Salmon, which can be found at Whole Foods Market.
