BigFish Brand expands with new smoked salmon, sea trout products

Grimsby’s JCS Fish is bulking up its BigFish Brand this spring with the addition of two new smoked seafood products.

The new products – BigFish Brand Traditional Smoked Salmon and BigFish Brand Smoked Sea Trout – are traditionally cured, oak-smoked and hand sliced, said the company. These latest additions serve to emulate the overarching aim for the brand, explained Andrew Coulbeck, JCS Fish’s managing director. 

“Our aim for BigFish Brand is ‘salmon with a twist’ – in other words interesting products with a focus on taste and accessibility for the consumer,” Coulbeck said. “Smoked fish is a natural next step and the inclusion of Sea Trout adds something a little bit different to the range overall.”

Made utilizing salmon’s close relative, Oncorhynchus mykiss (a strain of rainbow trout that is slow-grown at sea), the BigFish Brand Smoked Sea Trout product has a “a clean, marine flavor and firm flesh that is ideal for cold-smoking,” according to JCS Fish. 

“This is a distinctive new smoked range which with our BigFish branding will have excellent stand-out in the chilled cabinet.  Both products are delicious and well worth sampling,” added Coulbeck.

BigFish Brand Traditional Smoked Salmon and BigFish Brand Smoked Sea Trout are slated for release this spring, and the company has said it plans to release a number of other products over the course of 2017 under the BigFish Brand.
