Grimsby, United Kingdom-headquartered family-owned company JCS Fish has added a smoked fish range, called “Signature,” to its BigFish retail brand offering.
Comprised of the three products – including Oak Smoked Salmon, Oak Smoked Organic Salmon, and Oak Smoked Sea Trout – the new line uses whole sides of fish that are cured by hand with natural salt. The offerings are slowly smoked in a traditional kiln, using oak and other natural flavorings.
The range includes organic-certified salmon and a standard salmon with designated origin (PGI) status from Scotland that is certified to the GlobalG.A.P. (GGN) aquaculture standard. BigFish is the only brand in the U.K. to currently apply this standard.
“Smoked fish has long been part of our family heritage, but we only recently decided to bring it in-house again to give us the control and flexibility we were looking for. Signature is the result of our desire to create the most perfectly smoked products we could in our own Grimsby smokehouse,” said Andrew Coulbeck, co-founder and managing director of JCS Fish, regarding the new line.
Founded in 2000, JCS Fish has an annual turnover of around GBP 7 million (USD 8.6 million, EUR 7.9 million) and employs 48 people.
