McCormick & Schmick’s showcases Hawaiian fish

McCormick and Schmick’s Seafood Restaurants on Friday announced its new Hawaiian Prime Catch menu, available through March 2011.

The menu features several fresh seafood items from Hawaiian waters prepared using traditional Hawaiian-inspired flavors and ingredients.

Menu items include Angry Tuna Roll with spicy ahi tuna with jalapeno, garlic and flamed tobiko; Bamboo Steamer Basket of mong chong, baby bok choy, Maui onions, ginger and sea salt; Opakapaka, ramen style with soba noodles, tofu, edamame and soy broth; Shutome grilled with baby bok choy, roasted shitake and ponzu reduction; Hawaiian Seafood Trio of seared ahi, grilled shutome and macadamia crusted mahi mahi.

“As a leader in the seafood industry, we have always been committed to providing our guests with unique and diverse seafood choices so that they can explore and discover new tastes,” said Steve Foote, VP of culinary operations for the Portland, Ore.-based upscale seafood chain. “We have long-standing relationships with some key suppliers of premium Hawaiian seafood and felt there was an opportunity to showcase these prime varieties from Hawaii, many of which are at the peak of their season.”
