Foodservice research and consulting firm Technomic has released its latest data analyzing trends in the restaurant industry, and while it found that the total number of seafood dishes listed on restaurant menus in the United States has declined recently, restaurants continue to innovate when it comes to seafood dishes, hoping new trends will continue to attract the growing number of consumers eating seafood.

Overall fish dish entrees declined 6.6 percent in the second quarter of 2016, compared to the same quarter in 2015, while shellfish entrees declined 7.4 percent, according to Technomic.

However, restaurants that are adding seafood dishes are experimenting with different combinations and flavors – and using different parts of the fish – than they have in the past. Here are the top 5 new seafood restaurants trends to watch.
