Soft-shell crab, a regional delicacy in the tidewater area of the U.S. East Coast, is being featured at Kings Food Market.
“We are right at the soft-shell crab season, so we have some good availability on large, soft-shell crabs, as well as speeders and blue crabs,” Michener, the chain’s director of seafood sales and merchandising, said.
Michener is also a chef, and he encourages customers at the supermarket to try cooking this seasonal delicacy at home.
“[I help them] understand that there is more than one way to eat a soft-shell crab,” he said. “You can marinate them in Thai chili and cilantro, or lemongrass with soy and ginger. Then they get a smoky, Asian characteristic to them.”
