For two pounds of large peeled shrimp, prepare this marinade: three Serrano chili peppers, four garlic cloves, one tablespoon smoked paprika. ¼ cup fresh lemon juice, one tablespoon rice wine vinegar, ½ cup olive oil, one cup chopped cilantro and salt and pepper to taste. Marinade the shrimp for four hours to overnight. “Once the grill is hot, lower the heat to medium, and cook the skewers about three minutes on each side, basting with the marinade as the shrimp cook,” Carino said.
