Umami Bioworks introduces cultivated caviar

Singapore-based food production company Umami Bioworks has introduced cultivated caviar.

Umami uses proprietary cultivated technology and plant-based ingredients to create alternatives to seafood. According to the company, it develops its products “through the synthesis of machine learning, multi-omics biomarkers, and digital twins.”

According to Umami, the recently released alternative product to traditional caviar came about due to younger consumers beginning to drive the growing global caviar market.

"[We are] thrilled to introduce a product that resonated with ethically conscious, younger consumers, who are reshaping the definition of luxury,” Umami Product Manager Gayathri Mani said. 

The company has explored a variety of new technologies in the alt-protein sector in recent months. Most recently, it teamed up with Steakholder Foods to work toward commercializing and scaling 3D-printed proteins, launched a seafood safety and quality tool called Arbiter, and announced collaborations with Friends and Family Pet Food and two South Korean biotech frims. 

Throughout these moves, Umami has stated it intends to focus on commercially scaling sustainable seafood for the growing global population.

The company, which was founded in 2020, was initially styled “Umami Meats,” but it pivoted to seafood in 2023 when it opened an office in Tokyo, Japan, and rebranded itself as Umami Bioworks.

"By combining cutting-edge science with a deep respect for oceanic heritage, we are offering connoisseurs an indulgence that delivers exceptional taste and texture without compromise," Umami Bioworks CEO Mihir Pershad said of the new caviar product.

Its caviar analog will soon be available at select restaurants and retailers.
