Eataly North America recently switched to Monterey Bay Aquarium Seafood Watch “Green”-rated Nordic Blu Salmon supplied by CleanFish.
After utilizing several different Atlantic salmon brands, this is the first exclusive salmon partnership for the operator of 40 stores, which is known for the Italian dining experience in its stores. Nordic Blu Salmon is called out at Eataly’s fresh counters and on its restaurant menus.
“Eataly has never partnered with a salmon farm before. We were on a continuous search to find the right brand and we finally found Nordic Blu,” Eataly North America Quality Head of Meat and Seafood Peter Molinari told SeafoodSource.
Eataly is purchasing around 5,000 pounds of Nordic Blu Salmon monthly, Molinari said.
CleanFish is the sole importer of Nordic Blu to North America.
“We’re honored that the first national partnership for Nordic Blu Salmon is with Eataly, a brand respected around the world for quality and authenticity,” CleanFish Managing Director Mike Moniz said in a press release.
Produced in Norway by Salten Aqua Group, Nordic Blu Salmon made its debut earlier year at the 2019 edition of Seafood Expo North America. Nordic Blu is the highest eco-rated Atlantic salmon in the world with a score of 7.17 from Seafood Watch, CleanFish said.
“Nordic Blu has been very consistent on texture, fat content, and quality of the fish. They have been coming in fresher than most salmon we have ever purchased before,” Molinari said. “We have been happy with the connection we’ve developed between Eataly, Nordic Blu, and Clean fish to make sure our products are always the freshest.”
