Servings: 4
Preparation time: 5 minutes, cooking time: 10 minutes
Ingredients
- 4 sandwich thins
- 8 tbsp pesto sauce, either homemade or shop-bought
- 1 cup small shrimp (frozen and cooked)
- 1 cup shredded Monterrey or mozzarella cheese
Preparation
1) Preheat oven to 225°C. Separate sandwich thins and lay all of the halves with the sliced side facing up on a baking tray covered with parchment paper. Spray each “pizza crust” lightly with olive oil non-stick cooking spray (or brush with olive oil), and bake for 5 minutes.
2) Remove pizza crusts from the oven. Spread each with 1 tablespoon of pesto sauce, then top with 2 tablespoons of small shrimp (it’s okay if they’ve not thawed). Sprinkle with 2 tablespoons of cheese.
3) Put the pizzas back into the oven and bake for another 5 minutes, until crispy and the cheese is melted and gooey. Remove pizzas from the oven and serve!
