Utilizing the latest in food technology, California-based startup company New Wave Foods has created a synthetic shrimp product that it believes is the vehicle to true seafood sustainability. According to Florian Radke, a marketing specialist with the technology-driven food producer, New Wave’s “Shr!mp” has the ability to take sustainability to perhaps its purest form: “We truly believe that the real sustainable seafood can only happen if you cut the animals out of the equation,” he told SeafoodSource.
