Trident Seafoods introduces “diamond-cut” deep-skin pollock products

Seattle, Washington, U.S.A.-based Trident Seafoods and its German subsidiary, Pickenpack Seafoods, are bringing new deep-skin, value-added pollock products to the European market.

Trident’s new products, which include diamond-shaped bites cut from deep-skin,  are being paired with a variety of coatings, sauces, and portion sizes, Allan Kimball, Trident’s executive vice president of global species management group, told SeafoodSource at the 2018 Seafood Expo Global on 26 April.

“We’re really trying to bring new ideas and innovation every year into wild Alaska pollock,” Kimball said. “We want to provide creative new ways to enjoy this product for foodservice, retail, and all other channels.”

Pickenpack’s sauce accompaniments for its own version of the diamond-cut, skin-packed pollock include black garlic, cacao chili, and black truffle,  according to Kimball. The products come in 220-gram or 250-gram portions, and are primarily being targeted at single people buying a single serving or meal portion.

“Products like this are really a new category, and you can see the excitement at the [expo] as part of that,” Kimball said. “Using deep-skin and pairing it with new flavor innovations and a different size product, these items really are a different view of how this pollock has been done in the past in Europe.”
