Created by Boulder, Colo.-based The Kitchen, which operates eight restaurants, this appetizing dish is served both as a starter and a family plate. The Kitchen chefs combine raw shrimp with lemon, lemon zest, salt, egg and cornstarch in a food processor. Then, they spread the resulting paste on thickly-cut slices of brioche or challah bead. Here’s the best part: the entire concoction is dropped in a deep fryer. “You get this shrimp dumpling mixture on delicious toast, and it’s highly addictive,” said Kyle Mendenhall, executive chef for The Kitchen.
