Traditional Cajun and Creole dishes with shrimp done right are in again. For example, chefs at GW Fins in New Orleans create traditional Shrimp Creole using a roux of peppers onions and celery, tomatoes and a stock made from Gulf shrimp shells. They add Gulf shrimp at the end of cooking, and top the dish with green onions. “It’s a brothy dish, not super thick like a gumbo,” said Mike Nelson, executive chef at GW Fins.
