Upping the ante on ankimo, Ivan Ramen in New York has drawn rave reviews and devoted fans with its Ankimo Dirty Rice.

Chef Ivan Orkin, a New York native who made his name for his restaurants in Tokyo, has returned to his native city with a menu that serves creative new mash-ups of Japanese and American food.

The Ankimo Dirty Rice combines the classic dish from New Orleans with crumbles of stir-fried ankimo, as beguiling, light and melty as foie gras, according to a Time Out New York review.

“This stir fry preparation renders the organ meat cooked a good deal, which subsequently pervades the dish with a strong fishiness,” according to the Time Out review. “Squeeze some lemon over the top to balance out the funk, and you've got one seriously memorable side.”
