These mouthwatering beignets are one of the biggest sellers at Café B in New Orleans, La., one of Ralph Brennan’s restaurants. “It’s basically a savory doughnut and the Tasso ham gives it a nice smoky flavor,” said executive chef Michael Uddo. “We change the [savory] beignets out seasonally, so in the summer, they are crab beignets.”
