Toronto resort to menu eco-salmon

The Fairmont Royal York in Toronto at a luncheon on Tuesday announced that it will now menu eco-certified Atlantic salmon from Cooke Aquaculture.

Cooke Aquaculture’s True North Salmon is the only farmed seafood in North America to earn the Seafood Trust Certified Eco-Label.

“My customers are demanding not only healthy and high quality good, they also want to know where it comes from and how it’s produced,” said David Garcelon, the resort’s executive chef. “At Fairmont, the environment is top priority. We founded our Green Partnership program chain-wide in 1990, and True North’s eco-certified salmon is another great fit for us.”

In September, Fairmont Hotels and Resorts also announced that its Algonquin location in St. Andrews by-the-Sea, New Brunswick, will serve Cooke’s eco-certified Atlantic salmon.

In addition, the product is available at many grocery stores.
