This food truck business may have an eager customer base in Phoenix, Arizona, but The Lobster Lady and her crew are Mainers originally, and know the industry from trap to table. 

While visiting her partner’s daughter in Phoenix during Christmas one year, "Lobster Lady" Diana Santospago saw “first-hand the deprivation of all things seafood and the lightbulb went on.”

Ever since, The Lobster Lady food truck has split its time between Isle au Haut, Maine, hauling and selling lobster for the summer months, and Phoenix, starting in early November.

The Lobster Lady’s signature lobster roll is served up "Traditional Style" with chunks of chilled “Ultimate White Meat” Maine lobster, tossed with a touch of lemon aioli on a butter grilled roll. It can also be devoured warm and “drizzled with melted butter.”
