Carolynn Spence, Shaker and Spear - Whole snapper, basil, lime, and lemongrass

With a menu described as “casual comfort and oceanic fare,” there is a polish to even the burgers at the Shaker and Spear, located adjacent to the Kimpton Palladian Hotel in Belltown. Chef Carolynn Spence brings a long pedigree of experience, including working with Danny Myers and April Bloomfield, and then at Hollywood’s storied Chateau Marmont, where she was executive chef for 10 years.

Shaker and Spear’s whole snapper is sourced from New Zealand, and are around one-and-a-half pounds each. Scored and deep-fried to order in canola oil, the skin is crispy and golden, yet the meat still flaky and moist. Served with a spicy aioli and a lemongrass chili sauce, the fish is the foundation for a balanced infusion of flavor formed by the topping of arugula, basil, radish, pickled Fresno peppers, and grilled citrus.
