However, last Lenten season, Newk’s introduced ahi tuna salad and shrimp and avocado salad, “both of which were so popular that they became permanent menu items”, Wright said. The ahi tuna salad features flash-seared, sushi-grade Ahi tuna that has been marinated in an Asian-style blend of soy sauce, honey and mirin, tossed with cucumbers, grape tomatoes, radishes, carrots and Newk’s house-made ginger wasabi dressing on a bed of spring mix greens. The new Ahi Tuna Sandwich is the counterpart to the salad. “The addition of high-quality seafood like sushi-grade Ahi tuna and crawfish to our menu attracts both attention to our brand and guests to our restaurants,” Wright said.
