Echo Falls to debut new salmon caviar flavor at SENA

Following the success of its Traditional Salmon Caviar in recent years, Monroe, Washington, U.S.A.-based seafood brand Echo Falls Seafoods is offering a sneak peak of its new Wasabi Salmon Caviar at the 2025 Seafood Expo North America (SENA), which is set to take place in Boston, Massachusetts, U.S.A., from 16 to 18 March.

Echo Falls, which Ocean Beauty Seafoods rebranded as a standalone company last fall, will also give SENA attendees a sneak peak of other new products in development, as well as display its Oak-Smoked Yellowfin Tuna, launched last year, and its range of smoked fish and Salmon Nuggets at Booth #1205.

The company made the move to develop a new caviar flavor because there is growing interest in caviar, especially among younger consumers, Echo Falls VP of Sales and Marketing Ron Christianson told SeafoodSource. 

“Our existing Traditional Salmon Caviar has seen a healthy amount of growth in the last five years, and we’re seeing a rising interest from younger consumers in caviar in general,” he said.

Wasabi is a “fresh flavor,” according to Christianson, and its natural kick is complementary to the briny taste of wild salmon caviar. 

"Since salmon caviar is popularly used in a variety of Japanese-inspired recipes, such as poke bowls, the wasabi flavor is exceptionally well-suited as an ingredient or garnish,” he added.

The caviar tins sport new packaging that gives retailers flexibility, according to Christianson, as it can hang on a peg or stand on a shelf and does not take up much space.

Echo Falls is also focusing on consumers’ growing interest in snacking with its honey-cured smoked Alaskan sockeye salmon nuggets, which rolled out in late 2023.

“Knowing that younger consumers have an interest in dining in and learning how to host parties at home, Echo Falls is leaning into this trend by providing items and recipes that can be easily served a variety of ways – always with style,” Echo Falls President Alex Klein said in a press release.

Echo Falls will also highlight new packaging for its hot-smoked Atlantic salmon line, which is now available nationwide. The design features “new, youthful colors to complement the three distinct and on-trend flavors,” the company said. 

Additionally, the new design allows consumers to see the entire salmon portion, rather than being limited to a small window.

“Echo Falls products and packaging strive to educate the consumer about how the product is made, where it is from, and how to serve it,” Klein said. “This is refreshing at a time when competitors continue to commoditize this segment with generic descriptions that don’t address some of the basic information that consumers should be aware of when purchasing specialty seafood.”
