Mahi – Seaver called it “a good grill fish.” A favorite target of sport-fishers, mahi is associated with tropical locations, and as such is often served with chopped fruity salsa as a garnish. “These are nice, light, bright, summer flavors,” Seaver said. Like most fish, it’s good to take it a bit slower than one would with a steak, cooking it on the “cooler” side of the grill for indirect heat that allows more control over the cooking.
