A native of Muscle Shoals, Alabama, Adam Evans began working at The Grand Hotel in Point Clear, Alabama, in 2002 as a chef’s apprentice. He moved to New Orleans shortly afterward to be a line cook for Bacco, and later at La Petite Grocery in 2004. In May 2005, Evans became a sous chef at Craft, Tom Colicchio’s flagship restaurant in New York City. Evans later opened Craft Atlanta/Craftbar, a satellite restaurant in Georgia.

Evans went on to work with Ford Fry’s team at JCT. Kitchen & Bar and later opened Fry’s fish-camp destination, The Optimist, where he currently works as executive chef.
