Rubio’s rolls out grouper dishes in Florida

Rubio’s Restaurants, a San Diego, California, U.S.A.-based chain of 194 coastal cuisine eateries, recently rolled out wild grouper dishes at its Florida locations.

Miami, Florida-based Pacific Coral Seafood has been contracted with to supply the grouper, according to Rubio’s Co-Founder Ralph Rubio.

“We introduced wild grouper exclusively to our Florida locations, not only for its mild flavor and firm texture, but also because of its popularity in the market,” Rubio told SeafoodSource. “We’re excited to add this quality fish to our seafood menu, and hope our guests enjoy it all summer long.”

For a limited time, Rubio’s is featuring two grouper dishes: a Wild Grouper With Mango Salsa Two Taco Plate and a Wild Grouper Burrito.

The Two Taco Plate includes grilled or house-blackened wild grouper served on a flour tortilla, topped with a sweet citrus mango salsa, crisp cabbage, chipotle white sauce and handmade guacamole. The Wild Grouper Burrito is filled with grilled or house-blackened grouper, mango salsa, guacamole, citrus rice, crispy cabbage, cilantro and other ingredients in a flour tortilla.

“We love playing with innovative flavors and ingredients; so, while guests will be familiar with the premium fish, our Wild Grouper with Mango Salsa offers a sweet and tangy twist that we think locals will enjoy,” Rubio said.
