ASMI announces prepared foods challenge winners

A food editor and information specialist from a St. Louis-based grocery store chain has won the grand prize in the Alaska Seafood Marketing Institute (ASMI) Alaska Seafood Prepared Foods Challenge, ASMI announced in a release.

The contest, open to all American retail chefs from 1 to 31 October to coincide with National Seafood Month, called for retail-friendly recipes featuring wild Alaska seafood.

Chef Rosanne Toroian, of Schnuck Markets, won the grand prize of a trip to Alaska for her recipe, “Dilled Alaska Seafood Salad Sandwich.”

Other winners, who received $500 gift cards, included Jeff Anderson, executive chef and director of culinary innovation, consumer brands at Safeway, for his recipe, “Thai Curry Quick Alaska Cod with Instant Basmati,” which won in the best Alaska seafood hot entrée.

Chef Keoni Chang, corporate executive chef, director of prepared foods for the Sullivan family of companies, won best Alaska seafood appetizer with “Korean Style Alaska Salmon belly Skewers,” and in the side dish and best Alaska seafood salad category with “Spicy Alaska Surimi Seafood Roll Salad.”

“ASMI is excited by the response to the challenge and looks forward to more collaboration with retail chefs in the future,” ASMI said in a statement.
