Clean Seas launches hiramasa recipe contest

 Australia-based Clean Seas Tuna on Thursday launched a recipe contest in the United States and Canada.

The contest is open to any working chef or culinary student 18 years or older, and applicants are asked to submit original recipes using raw, cooked or smoked preparations of Clean Seas yellowtail kingfish, or hiramasa.

The contest, in partnership with Milestone Culinary Arts Center in Dallas, will be an "East versus West competition," with three prize winners in each region. First prize is USD 2,000, second is USD 1,000 and third is USD 500.

A grand prize winner will be determined by a cook-off between the two first-place winners on 31 January and 1 February and judged by a panel at Milestone. He or she will receive an all-expense-paid trip to Australia to visit Clean Seas and will appear and cook at the International Boston Seafood Show in March.
