Famous chefs pick their favorite seafood dishes for Thanksgiving

Delroy Bowen, the executive chef at Sage Woodfire Tavern, which has three locations in the Atlanta, Georgia area, enjoys making seafood medley stew, which he said reminds him of his youth. 

“Growing up in Jamaica, seafood was plentiful and was the perfect ingredient to incorporate into our Thanksgiving feast,” he said.  

The one-pot dish can include mussels, shrimp, clams, squid, and other seafood of the individual cook’s choosing. Typically, this type of stew is has a water base, but Bowen’s version features cream and pumpkin. In addition, the stew includes Old Bay seasoning, garlic, butter, vegetables, cilantro, thyme, scallions, wine, clam juice, and bay leaf. 

“The combination of spices, specifically the Old Bay, clam juice, cream, and pumpkin, really make this something special and fits in with Thanksgiving very well,” Bowen said.
