Fish taco chains name new executives

Two fish taco chains on Tuesday announced they hired new executives.

Carlsbad, Calif.-based Rubio’s Fresh Mexican Grill promoted Marc Simon to the newly created position of COO. Simon will oversee all operational aspects of Rubio’s restaurants, including field operations, operations services, field training, quality control and supply-chain management.

Simon joined Rubio’s in November 2007 as senior VP of operations. Prior to that, he served as CEO of America’s Incredible Pizza Co., VP of corporate development for McDonald’s Corp.

“This well-deserved promotion recognizes the significant impact Marc has made in leading our operations team and is a reflection of his passion for continuous improvement in all aspects of the business,” said Daniel Pittard, Rubio’s president and CEO.

Taco Del Mar of Seattle appointed Rick Braa as CFO. Braa has an extensive background in accounting and finance. He was formerly a principal and director of Clothier & Head, Taco Del Mar’s former audit firm. He has also held positions at West Farm Foods and Restaurants Unlimited.
